Eden Mill’s New Distillery Ignites Scotch and Gin Production with Sustainable Ambition

On April 7, 2025, Eden Mill filled its first whisky cask at its new St Andrews distillery, kicking off a bold new chapter for the Scottish craft spirits maker. Nestled at the University of St Andrews’ Eden Campus, the multimillion-pound facility boasts a one-million-liter annual capacity, scaling up production of Eden Mill’s whiskies and core gins—Golf, Love, and Original. With fewer than 400 whisky casks left, the new site secures future supply, while redesigned gin bottles prepare the brand for global markets.

Sustainability drives the operation. Powered by renewable energy from the university’s solar farm, the distillery partners with MiAlgae to repurpose draff, meeting eco-conscious demand prized by distributors in Europe and North America. With Scotch whisky exports topping £5 billion in 2024 and craft gin thriving, Eden Mill’s expanded output positions it to capture rising demand.

Rooted in St Andrews—absent from spirits production for over 150 years until Eden Mill’s 2012 debut—the distillery’s “single site” approach crafts both gin and whisky under one roof, a rare selling point in a crowded market. A visitor center, set for August 2025, will offer tours, but production remains the focus. This facility marks Eden Mill’s leap toward global growth, blending heritage with green innovation.
